Turkey leftovers!

My mother-in-law introduced me to her version of a leftover turkey sandwich years ago. I tweeked it to our personal taste, which we are enjoying this Thanksgiving weekend right now!


1 cup of leftover chopped turkey
1/4 c. miracle whip (or other salad dressing)
1/4 c. shredded sharp cheddar cheese
1/4 c. cranberry relish
2-3 TBLS. sweet relish
2-3 TBLS. minced onion
2-3 TBLS. thinly sliced celery
4 slices of whole grain bread, toasted


While the bread is toasting, mix the turkey and other ingredients, you may have to add more salad dressing to get it as moist as you like. Spread the toast with the turkey mixture and place under the broiler for about 1 minute until bubbly. Serves 4 open faced sandwiches.
