Peanut Brittle

Peanut Brittle
This is the best peanut brittle I have ever ran across -- I always double this recipe. When not over cooked - it breaks very easily.

Ingredients

2 cups of white corn syrup
1/4 tsp of salt
2 cups of sugar
1/2 cup of water
4 T of Oleo

1 - 1 1/2 cups of raw spanish peanuts
1 tsp of soda

Directions

Cook the first 5 ingredients till it reaches 280 degrees

Then Add 1-1 1/2 cups of raw spanish peanuts and cook till 300 degrees.

Once it hits 300 degrees - quickly stir in your soda - and mix it up - it will be very foamy. Pour it into a buttered cookie sheet pan and let cool. Break up and store.
