Pumpkin Delight

I love to make this dessert in the fall, especially for Thanksgiving. It is quicker and easier to make than a pie. Everyone raves over it when I take it to church or work pot lucks.


1 (15 oz.) can pumpkin
1 large can evaporated milk
1 cup sugar
1 tsp. cinnamon
1/2 tsp. salt
3 eggs
1/2 box dry, unprepared yellow cake mix (approximately 2 cups)
3/4 cup broken pecan pieces


Mix pumpkin, evaporated milk, sugar, cinnamon, salt and eggs in mixing bowl. Pour into greased oblong baking dish (I use cooking spray). Sprinkle dry cake mix on top of pumpkin mixture (do not mix in). Cut butter into slices and dollop moderately heavily on top of cake mix. Sprinkle with chopped nuts. Bake at 350 for 45 minutes. Serve chilled or warm with cream.

Note: Half a box of dry cake mix is equal to approximately 2 cups. I freeze the other half and then it is ready when I make the next recipe.
