red velvet mini cup cakes

bite size pieces of the classic cake perfect for a party

Ingredients

1 (18.25 once) package german chocolate cake mix
1/2 cup butter melted
3 eggs
1 1 oz bottle red food color
water as needed
Frosting
2/3 cup butter softened
6 cups powdered sugar
1 teaspoon vanilla
1/8 teaspoon salt
4 to 6 tablespoons milk
decorator sprinkles

Directions

Heat oven to 350 line 48 mini or 24 regular cups with paper baking cups
set aside.

Combine cake mix, melted butter, eggs, red food color, and amount of water as indicated on cake mix package in large bowl . Beat at low speed
30 seconds increase speed to medium beat , scraping bowl often until well
mixed.
Fill prepared cups 2/3 full. Bake for 12 to 16 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. remove cupcakes from pans cool completely. Place 2/3 cup butter in medium bowl beat at medium speed until creamy continue beating gradually adding powered sugar, vanilla, salt, and enough milk for desired spreading consistency . Frost cooled cupcakes sprinkle with with decorator sprinkles.

48 mini or 24 regular cupcakes.
