banana muffins

These are good with melted butter or cream cheese on top

Ingredients

3 very ripe bananas
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/2 cup margarine melted , cooled
1 cup all -purpose flour
1 cup whole wheat flour
1 1/2 teaspoon baking soda
3 tablespoons buttermilk

Directions

Pre heat oven to 300 Mash bananas in a medium bowl . Add sugar, brown sugar, and eggs mix well . Add margarine , stir in flour and soda .
Mix in buttermilk , Fill paper lined cups half full with batter . Bake for 20 minutes .

Note if you don't have buttermilk mix in 1 cup milk with 1 tablespoon white vinegar or 1 tablespoon lemon juice . Stir 2 ingredients together
and let stand 15 minutes . it should start to curdle . stir before using .
