Carrot Raisin Bran Muffins

Moist bran muffins

Ingredients

1 c. grated carrots, 1/2 c. raisins, 2 cups raisin bran cereal, 1 c. hot water, 3 c. flour, 4 eggs, 3 c. sugar, 1 c. oil, 1 1/2 tsp. salt, 2 tsp. baking soda, 2 tsp. cinnamon, 1 c. milk, 2 T. vinegar,

Directions

Heat oven to 350 degrees. Pour hot water over cereal and let set for 20 mins. Combine vinegar and milk and set aside. Mix flour, soda, salt, cinnamon in large bowl, set aside. Mix sugar, eggs, oil, cereal & water mixture and milk & vinegar mixture together and then add to dry mixture. Fold in carrots and raisins.
Fill muffin tin or papers 3/4 full, bake for 28 mins. Let cool for 5 minutes in muffin pan. Makes 28 muffins.
