Lemonade Pie

This is a light, refreshing pie. Children like it as much as adults.


1 3oz. pkg. lemon gelatin; 1 8 oz. pkg. light cream cheese, cubed; 1 3/4 tsp. lemonade drink mix, regular or sugar-free; 1 8-inch graham cracker crust...purchased or homemade. (I sometimes use a chocolate cookie crust).


Prepare gelatin according to package directions. Refrigerate until almost set. Transfer to a blender or food processor. Add cubed cream cheese and lemonade mix; cover and process until smooth. Pour into crust. Refrigerate overnight. Serve with whipped topping.
