Vanilla Tea Cake

Vanilla Tea Cake

This is a very unusual cake. The temperature of 300 degrees F. is not an error and the 2 hour bake time is not an error. And it turns out great.

Ingredients

1 Cup Butter (no substitutions)
2 Cups sugar
6 Eggs
1 package (12 ounces) vanilla wafers ground to coarse meal
1/2 Cup milk
7 1/2 ounces coconut
1 Cup ground pecans

Directions

Preheat oven to 300 degrees. Grease Tube pan or bundt pan.
Beat together butter and sugar.
Add eggs 1 at a time, beat well between.
Add Vanilla wafers and milk. Mix until blended.
Add remaining ingredients, mixing in well.
Pour into prepared pan.
Bake for 2 hours. Cool in pan for 10 minutes. Invert onto wire rack and cool for at least 1 hour.
