Electric Skillet PB Fudge

This is a good recipe to make when you're taking it easy, and don't want to heat up the kitchen.


2 c. gran. sugar (or Splenda)
3 T. butter
1 c. Carnation evap. milk
1 c. mini marshmallows
1-1/3 c. peanut butter (chunky, if you like)
1 t. vanilla extract


Stir together sugar, butter and evaporated milk in an electric skillet. Set thermostat at 250 degrees F. Boil, stirring constantly, for five minutes. Turn off pan. Stir in marshmallows, PB, and vanilla, until blended completely. Before it gets too cool, pour into a well-buttered 8-inch square pan. Cool. Cut into 16 squares.
