This is one of the easiest pies that I have ever made. It is not only easy to make, but it is delicious as well. I find it goes over better than a lemon meringue pie. It is great to take to a potluck or family reunion.


5 Tablespoons flour
1 cup sugar
2 egg yolks at room temperature]
1 cup Carnation evaporated milk
2 beaten egg whites
2 Tablespoons melted butter
Grated rind and juice of one large lemon
1 raw pie crust


In a medium sized dish, beat flour, sugar, egg yolks, melted butter and grated rind of lemon and lemon juice for 3 minutes.
Add 1 cup Carnation evaporated milk. Fold everything into beaten egg whites. Pour into raw pie crust, bake for 40 minutes at 350 degrees.
