Stuffed Tomatoes

This recipe caught my eye. I have not tried it but it sounded interesting.


6 medium to large tomatoes
1 cup peanut butter
1 cup chopped green bell pepper
1/2 cup chopped onion
round crackers


Scoop out the inside of the tomatoes making a cup; save the scooped out portion. Sprinkle the inside of the tomatoe cups with salt.
Mix the reserved tomato and remaining ingredients, adding enough crumbled crackers to absorb extra juice. Fill tomato cups and chill.
