Ingredients
2 cups sugar (white or brown, or Splenda)
3 tablespoons ground cocoa (not drink mix)
1/4 cup butter
1/2 cup Carnation evaporated milk
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups rolled oats
Directions
Place sugar and cocoa powder in a large saucepan and stir to thoroughly blend. Add butter and milk, and set heat on low. Stir until butter is melted and milk is incorporated into cocoa mixture, then turn heat to medium and bring to a rolling boil (bubbles all over the top of the mixture). Boil for 1-1/2 minutes, or 90 seconds. Remove from burner, stir in peanut butter and vanilla. Then add oats, stirring to mix.
Spoon out cookies onto an ungreased baking sheet, or a sheet of waxed paper (no mess!) to cool. Work quickly; you will have about 3-4 minutes before the cookies are set.
Makes 18 delicious treats.
Note: If marshmallows are your thing, you can add 1 cup of mini's with the oats, resulting in 24 treats. Or peanuts...
