Refrigerator Mashed Potatoes

Like the convenience of deli mashed potatoes? Make your own for much less cost and much better flavor.


5# potatoes
6oz cream cheese
1 cup dairy sour cream
2 Tbls butter
salt and pepper to taste
garlic is optional


Cook the potatoes until tender, drain and mash until smooth. Add remaining ingredients and beat until light and fluffy. Let cool, cover and refrigerate up to 2 weeks.
To use: place desired amount in greased casserole, dot with butter and bake at 350 until heated through.
Note: can also be heated in the microwave.
