Rice, Spinach and Cheese Bake

This is a good for you side as well as being delicious.

Ingredients

1 cup uncooked brown rice
2 cups cream style cottage cheese
2 eggs beaten
10oz pkg frozen spinach, thawed and drained
4oz can green chilies
8oz shredded Monterey Jack cheese
salt and pepper to taste

Directions

Cook rice according to pkg directions.
Combine the cottage cheese, eggs, spinach, chili peppers, 2/3 cup of Jack cheese and salt and pepper. Add the rice.
Spoon into a greased 2 quart baking dish. Top with remaining cheese.
Bake at 350 for 45 minutes or until bubbly and lightly brown.
