Apricot Salad

Takes a little time preparing but makes a large amount. Serves 16-20


2 3oz pkgs apricot gelatin
2 cups boiling water
1 cup pineapple and apricot juice combined
1 large can(#2-1/2) apricots drained and mashed (reserve the juice)
1 large can crushed pineapple drained (reserve juice)
1 pkg mini marshmallows
1 cup mixed juice from fruit
1/2 cup sugar
2 heaping Tbls flour
1 beaten egg
2 Tbls butter
8oz frozen whipped topping or 1 cup heavy cream whipped


Combine gelatin with boiling water and stir until dissolved. Add juice, fruit and marshmallows. Pour into an 11x15 pan and refrigerate until firm. When firm top with the following.
Mix the first 5 ingredients together and cook until thick. Let cool and fold in the whipped topping. Spread on the gelatin and top with grated cheese if desired.
