1 cup sour cream
3 Tbls lemon juice
1 large clove of garlic, minced
dash each of tabasco, salt and pepper
8 chicken breasts
2 cups saltine crumbs
2 Tbls fresh thyme
2 tsp dry mustard
1 tsp paprika
1/4 tsp cayenne pepper
Mix together the sour cream, lemon juice, garlic and seasonings. Coat the chicken with this mixture and marinate for 1 hour at room temp or chilled overnight.
Combine the crumbs and spices. roll the chicken in this mixture. Shake off excess. Place 1" apart on a greased baking sheet. Drizzle with unsalted butter.
Bake in a preheated 375 oven until golden brown and tender, about 1 hour.
