PEANUT BUTTER MERINGUES

These cookies are so easy to make. I like this meringue cookie recipe best of all. The kids love to help make them. Do not double. If you want more make another batch. This is a recipe that you should not try to double. This recipe makes about 2 dozen.

Ingredients

2/3 cup sifted confectioner's sugar
1/2 cup peanut butter
2 egg whites stiffly beaten
salted peanuts

Directions

Preheat oven to 375 degrees. Gradually add confectioner's sugar to peanut butter, mix
well; fold stiffly beaten egg whites into mixture.
Cover cookie sheets with brown paper. Drop by teaspoons onto paper. Top each cookie with a
peanut.
Bake 10 minutes. Cool, remove from paper.
