Eggless Pumpkin Cookies

Eggless Pumpkin Cookies

These stay soft and should be refrigerated.

Ingredients

1 cup brown sugar, packed
1 cup Libby's pumpkin
1/2 cup oil
2 cups flour, sifted with
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ginger
1/2 tsp cinnamon

1 tsp vanilla
1/2 cup chopped nuts

Directions

Beat the sugar and pumpkin. Combine the dry ingredients and add alternately with the oil to the creamed mixture. Add the vanilla and nuts.
Drop by spoonful on a greased cookie sheet. Bake at 350 for 20 minutes.
