Ingredients
Two 9-inch pie crusts
8 large yellow apples, peeled, cored, and sliced
1 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon allspice
2 tablespoons flour
Topping:
2 tablespoons granulated sugar
3 tablespoons butter
Directions
Preheat oven to 450 degrees F.
In a large bowl, stir together apples, sugar, spices, and flour.
Place one crust in a pie pan, leaving edges hanging over sides of pan. Pile in all the apple mixture, heaping it high in the center.
Top with second crust, pulling bottom crust over top, and crimping the two together between both thumbs and pointer fingers.
Cut an "A" or your favorite letter or shape ("Dad?") in the center of the top crust, to vent steam.
Slice bits of butter all over top crust. Sprinkle top of pie with sugar. Place pie on a pre-sprayed baking sheet (to prevent spills in your nice clean oven) in preheated 450 oven for 10 minutes, then, without removing pie, lower temperature to 350 degrees F. and bake an additional 50-55 minutes. Top should be nicely browned.
Cool for at least an hour before cutting pie into 6-8 wedges. Delicious, topped with a scoop of vanilla ice cream.
