Coconut Rum Soaked Raisin Cookies

Great for a tropical themed party!

Ingredients

2 sticks softened butter
1 1/2 cups Raisins soaked in 1/4 cup dark rum
2 eggs
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
2 cups toasted coconut
1 cup quick oats
1 1/2 cups sifted flour
1 1/2 cups light brown sugar

Directions

Preheat oven 350*
Line 2 baking sheets with parchment paper.
Cream together butter, brown sugar and eggs in a large bowl.
Sift in dry ingredients, combine and add vanilla.
Strain raisins and add to batter.
Scoop heaping teaspoons of batter onto prepared baking pan 2 inches apart.
Bake @ 350* for 10 - 12 minutes
Let cook on baking pan for a few mintes before transfering them to wire rack.
