frittatas are great party food because they can be made ahead of time & served warm or at room temperature.


2 tsp olive oil
2 medium red bell peppers,diced(2 cups)
1 1/2 cups while or yellow corn kernels
8 green onions,sliced ,1 cup
1 tbsp dried oregano
2 tsp ground cumin
1/2 tsp salt
1/4 tsp ancho chile pwd
3 large eggs
1 1/2 cups liquid egg whites
1/4 cup low fat milk
3/4 cup shredded cheese
1 tomato cut into 8 slices
2 tbsp chopped fresh cilantro


preheat oven to 375f.coat 8 six oz ramekins with nonstick cooking spray.set ramekins on baking sheet.
heat oil over medium high heat.add bellpepers,corn, green onions,and saute 3mts unter vegs are tender.remove from heat & stir salt, cumin,oregano& chile pwd.
whisk togetherwhole eggs,egg whites,milk.fold in cheese & corn mixture.divide mixture among prepared each fritata with tomato slice.
bake 30-35mtsor until golden brown.let stand 5mts.sprinkle with cilantro.serve.
