This is so good, it could easily be a vegetarian main dish. Or it goes nicely with chicken, seafood, or ham. Try it on your next buffet!


2 T. butter
1 cup Basmati rice (or long grain rice)
1 cup orange juice
1-1/2 cup water
1 t. salt
1/2 cup seedless raisins
1/4 t. grated orange zest (peel)
1 T. minced parsley


Combine rice and butter in a large saucepan. Stirring constantly, heat on low to medium until rice is fragrant and lightly toasted.

Add juice, water, salt and raisins, cover, and simmer on low for 17 minutes, until all liquid is absorbed. Remove from heat, and stir lightly with a fork to fluff.

Toss in zest and parsley. Serve immediately.
Makes 4-6 side dish portions, or 2 entrees.
