Preheat oven to 325 degrees F. Grease a 9 X 13 inch baking dish, or two loaf pans.
Beat sugar, oil, eggs, and vanilla until light and creamy. Sift together flour, salt, soda and cinnamon, then add to first mixture. Stir in the pie filling and nuts.
Bake for 60-75 minutes, depending on your choice of pan(s), until golden. Dust with powdered sugar, if desired. Serves 16.
