Heat oven to 350 . For crumb mixture , in small mixer bowl , combine all crumb mixture ingredients . Beat at low speed , scraping bowl often
until well mixed. 1-2 minutes. Reserve 1/2 cup of crumb mixture . Press remaining crumb mixture on bottom of a ungreased 8 inch square baking pan . Bake for 12to 17 minutes or until edges are lightly browned.
For filling , In same mixing bowl , combine cream cheese, sugar, egg, and lemon juice .Beat at medium speed , scraping bowl often , until mixture is light and fluffy , 1-2 minutes .Stir in pineapple .Spread filling over hot crust . Sprinkle 1/2 cup reserved crumb mixture over top . Continue baking for 15 to 20 minutes, or until edges are lightly browned. Cool completely. Cut into bars . Store uncoverd in refrigerator.
