2 small packages of cherry Jello gelatin
2 cups boiling water
3 ounce package cream cheese, room temperature
15 ounce can cherry pie filling (sugar free works as well as regular), chilled overnight
8 ounce carton whipped topping
Combine one package gelatin with 1 cup boiling water. Stir until gelatin is dissolved, then stir in chilled cherry pie filling. Pour mixture into 9 X 13 baking dish and refrigerate until set, about one hour.
Combine remaining package gelatin with 1 cup boiling water. Stir until gelatin is dissolved, then stir in cream cheese. Whisk until dissolved. Cool to room temperature. Stir in half of whipped topping, then whisk until thoroughly combined.
Pour second mixture over first in baking dish, and chill until set, about two hours.
Spread remaining whipped topping over gelatin before serving.
