this warm, nourishing INDIAN RECIPE IS GREAT WITH HOT BASMATI RICE OR WARM NAAN BREAD. SERVES-4 PREPARATION TIME 30-35 MTS,

Ingredients

2 TBSP VEGETABLE OIL
1/2 TEASPOON MUSTARD SEEDS
2 LARGE ONIONS, SLICED
4 CLOVES GARLIC CRUSHED
1/2 INCH FRESH GINGER PEELED & GRATED
2 GREEN CHILI PEPPER,SEEDED & CHOPPED
1 TEASPOON TURMERIC POWDER
SALT -TASTE
1 POUND PUMPKIN PEELED, SEEDED & CUBED
1 TEASPOON SUGAR
2/3 CUP WATER
FRESHLY CHOPPED CILANTRO -GARNISH

Directions

IN A MEDIUM SAUCEPAN, HEAT OIL & FRY MUSTARD SEEDS FOR 1 MT OVER MEDIUM HEAT. THEN ADD ONIONS, GINGER, GARLIC, CHILI PEPPERS.STIR FRY FOR 5MTS.ADD TURMERIC & MIX WELL.THEN ADD PUMPKIN,LITTLE SALT, SUGAR & MIX WELL.COOK GENTLY COVERED FOR 10MTS STIRRING OCAssionally.then add water & continue to cook until pumpkinis tender for about 5-10mts.serve sprinkled with cilantro.
