Crockpot Pumpkin Pie Pudding

A friend of mine brought this to a pot luck dinner last Christmas and I absolutely loved it. Also it is so easy to prepare during the busy holiday season and it is always a big hit.

Ingredients

1 15oz can solid pack pumpkin
1 12oz can evaporated milk
3/4c sugar
1/2c baking mix (Bisquick type)
2 eggs beaten
2 tbsp butter or margarine, melted
2 1/2 tsp pumpkin pie spice
2 tsp vanilla extract
whipped topping, optional
not-stick cooking spray
nutmeg

Directions

In a large bowl combine the first 8 ingredients. Spray your crockpot with nonstick cooking spray. Put the pumpkin mixture into the crockpot. Cover and cook on low for 6 to 7 hours. Serve in bowls with whipped topping and a sprinkle of nutmeg.
