Spiced Rum Balls

These little spiced treats are not for children, or the faint of heart. They smell fabulous, and are actually easy to make. When was the last time you wanted to lick the bowl after making cookies? You will with this recipe!


3 cups finely crushed graham crackers
1/2 cup finely crushed walnuts or pecans
1 cup Confectioner's sugar
3 tablespoons light corn syrup
1/3 cup spiced rum (Captain M)
1-1/2 cup Confectioner's sugar (for coating)
1/2 teaspoon ground cinnamon (for coating)


Crush crackers, preferably using a food processor, until very fine. Add nuts and 1 cup Confectioner's sugar, and grind together finely. Turn crumbs into a medium mixing bowl. Add syrup and stir. Add rum and blend thoroughly. Smells great! On a small tray, sift together 1-1/2 cup Confectioner's sugar and cinnamon, forming a small mound in center fo tray. Shape rum balls about 1/2" in diameter with lightly-sugared hands, then roll in sugar and cinnamon. Place sugared rum balls in a tin which has been dusted with a little more Confectioner's sugar. When all rum balls are made, top with any leftover sugar from the tray. Tightly cover. Makes about 48. (Did I mention how great these smell?!)
