Summer Tacos

Summer Tacos

This is a very nutritious preparation which is ideal for all ages but loved very much by the kids.

Ingredients

Taco shells-6 nos.,
Canned Red kidney beans-1 no.,
Red capsicum-1/2 cup(juliened),
Cabbage-1/2 cup(juliened),
Spring onion-2 tblspns(juliened),
Carrot-1/2 cup(juliened),
Tomatoes-1/4 cup(juliened),
Chopped garlic-1 or 2 tspn,
Chilli sauce-1 or 2 drops(optional),
Grated Cheddar cheese,
Sugar and Salt-in required quantity

Directions

1. First of all,put all the juliened vegetables in a bowl,mix it and keep it aside.
2. Now in a pan,put the canned beans,chopped garlic,sugar and salt.Stir it till the sugar melts and it has reached the desired consistency.Off the stove and set it aside.
3. Next,take a taco and put one or two tablespoon/s of this prepared bean mixture inside it.Over it put the chilli sauce and over this,put the vegetable mixed and kept aside.
4. Lastly put the grated cheese and serve.

P.S.If one does not want to put the chilli sauce uncooked,then it can be added while preparing the bean mixture and used for the above recipe.
