Moist ardamon cake

an excellent moist cake


2 eggs, separated
2 1/4 cups sifted flour
1 tsp. baking soda
1 tsp. baking powder
1 1/4 tsp. cardamom
3/4 cup butter or margarine
3/4 cup sugar
3/4 cup honey
3/4 cup orange juice
1/4 cup chopped nuts


Set oven at 325 F.

Grease and lightly flour a 10 inch tube pan.

sift cake flour, baking powder, baking soda, and cardamom into a small bowl.

Heat butter over low heat until melted, continue beating until butter turns a delicate brown.

Pour into large mixing bowl .

Add egg yolks, sugar and honey.

Beat with an electric mixer on medium speed until combined.

Add flour mixture alternately with the orange juice, beating on low speed after each addition until combined.

Fold in nuts.

Beat egg whites and 2 tbsp sugar in a medium bowl until stiff peaks form. Fold whites in batter.

Spoon batter into prepared pan. Bake for 45-50 minutes or until center comes out clean.
