Merle's Sunshine Cake

My Mom used to bake this to take into work for lunchtime parties. She had to make an extra one for us at home, as there were never any leftovers. This is a moist, delicious cake.

Ingredients

Batter: Place the following in a large bowl:
1 box yellow cake mix
1 can Mandarin oranges including juice
4 eggs
½ cup Wesson Oil

Icing: ½ of a 13 oz. carton of Cool Whip
½ package “small” instant vanilla pudding.
1 can drained pineapple

Directions

Beat batter ingredients until well blended; bake at 350 degrees for 25 minutes & cool completely before icing. Keep iced cake refrigerated.
