Pesto Salmon Cakes

Delicously Lite & flaky cakes

Ingredients

1 can Salmon
egg
Saltine Crackers
Salt & Pepper (S&P)
Chives
Basil
Garlic
Parmesan Cheese
Extra Virgin Olive Oil (E.V.O.O)
Spinach
Lemons

Directions

1. In a Food Processor.- Crackers, S&P, a couple basil leaves( set aside).
2. Process.- Basil, Garlic, Parmesan Cheese, (Spinach if you like - its good :), Slow pour e.v.o.o. Chill till serve.
3. Heat oil in pan. & Steamer pot.
4. Prepare cakes, salmon, egg, chives, s&p, into cracker crumbs.
5. Cook till golden, crisp :)
6. Steam spinach with Pepper (salt if you like) (Squeeze lemon on cakes & spinach) serve with pesto :)
