Cornmeal Custard Pudding

Another old time recipe.


2-1/2 Tbls cornmeal
2 Tbls light molasses
3/4 cup sugar
1/4 tsp salt
1/4 tsp cinnamon
2 cups milk
2 eggs
whipped cream is optional


Combine the cornmeal, molasses, sugar, salt and cinnamon and milk. Separate the eggs. Beat the egg yolks until light and add to the milk mixture. Beat the egg whites until and fold into the batter. Bake in a greased dish at 350 for 45 minutes.
Serve warm with whipped cream if desired.
