makes 5-6 cups.this can be used as a base for soup or enhance it with variations.

Ingredients

big head of garlic , preferably fresh , firm hard necked variety.
6 sage leaves
2 bay leaves
2 thyme sprigs
2 parsely branches
sea salt
freshly ground pepper
olive oil.

Directions

put 5 cups water in a soup pot over high heat.separete the garlic cloves peel them& add them along with herbs & 1/2 teaspoon salt.bring boil & cook for 20 mts.strain into a cleanpot.the cloves can be strained or just kept in the broth.add salt & pepper to taste with few drops of olive oil.
