Among my meanderings among old recipe books, I found this great recipe from 2001. It is so good that you won't have to worry about how to store the leftovers, because there will be none. I like this recipe because I can make it in very little time and serve it for lunch or dinner.


1 roll Nestles' Sugar cookie dough
8 ounces cream cheese, softened
1/4 cup creamy peanut butter
1/2 cup brown sugar
1/2 teaspoon vanilla
2 to 3 medium sized apples (any kind)


Spread cookie dough into a pizza pan
Bake for 10 minutes at 350 degrees. Put crcookie on a rack to cool in the pan.
Mix together well, cream cheese, peanut butter, brown sugar and vanilla. Spread on cooled cookie crust. Slice apples, do not peel. Arrange on the top. Sprinkle chopped nuts on top (optional). Drizzle with caramel ice cream topping. Refrigerate till serving time.
