Cranberry Cookies

Dried cranberries make these cookies available year round. Orange zest and juice add tang to these cookies. (Fresh juice is best.)


2 c. flour; 3/4 c. sugar; 3/4 tsp. salt; 1/2 tsp. baking soda; 1/4 c. olive oil; 1/4 c. butter, melted; 1/2 c. orange juice; 1 egg; 1 c. dried cranberries; 1/2 c. pecans, chopped; 1 1/2 tsp. orange zest.


Preheat oven to 400 degrees. Mix flour, sugar, salt and baking soda. Set aside. Beat oil, butter and juice for 2 minutes. Add egg. Slowly add flour mixture until just incorporated. Add cranberries, nuts and zest. Drop heaping Tbsp. onto greased cookie sheet. Bake 8-10 minutes until firm and golden. Cool on wire racks.
