1. Prepare Marinade & allow to marinate for at least 30 mins.
2. Prepare Kebabs. Alternate Bell pepper, onion garlic, mushroom, Pineapple. Season chicken and kebabs.
3. Grill Chicken and Kebabs, until done.(We like it when the juices of the marinade are over the chicken and let carmelize)
4. Pepare rice. 1/2 water, 1/2 coconut milk. Add shredded coconut, lime zest and little juice.
5. Take reserved Marinade and simmer in small saucepan. Let bubble and Serve with chicken, veggies and rice.
