Mix all the ingredients on low speed for 3-4 minutes. Dough should form a ball. Put on a parchment lined baking sheet and with floured hands form into a rectangle about 14x4x1/2. Mound so it is slightly higher in the center. Bake,350, until it feels firm and a toothpick comes out clean, about 30-35 minutes. Remove from oven and cool about 10 minutes. (leave the oven on).
Slice, using a serated bread knife, into 1 inch slices, you should get 14 slices. Return to the baking sheet laying each piece on its side. Bake for 10 minutes. Turn off the oven but leave the biscotti in the oven until they are crisp, 30-40 minutes. Remove to a wire rack and cool completely.
