English Toffee

This English toffee is so delicious that you will have to make more than one batch of it because it really is eaten quickly. Do not try to double the batch. It is better to do it one at a time. This is a great gift to give friends and family at Christmas. I am going to start buying my ingredients now so that I will have them on hand and can make it any time that I want. My girls just think this is the greatest candy ever. It is so easy to make.


1 cup chopped pecans
3/4 cup packed brown sugar
1 stick butter or margarine (butter makes it richer tasting.
1/2 cup milk chocolate chips


Using a paper towel, spread butter or margarine on the bottom and sides of a 9 x 9 inch pan or glass dish.
Evenly, spread chopped pecans in the pan ore dish. Place sugar and butter in a heavy, medium saucepan. Heat to boiling, stirring constantly. Boil over medium heat for 7 minutes.
Immediately pour and spread mixture evenly over nuts in pan.
Sprinkle chocolate morsels over hot mixture. Place baking sheet over top so that chips will melt. After about 1 minute, spread chips over toffee. While candy is hot, cut into squares. Chill till firm or package in an airtight container as a gift.
