1/2 cup butter, softened
1 cup sugar
1 tsp baking soda
1 cup buttermilk
2 cups all-purpose flour
1 (9oz) pkg condensed mincemeat, crumbled
Caramel Cream Frosting
1 cup plus 2 Tbls sugar
1/2 cup butter
1/2 cup whipping cream
Cream butter, gradually add the sugar. Beat until fluffy. Add the eggs beating well after each one.
Dissolve the soda in the buttermilk. Add the flour and buttermilk alternately, mixing well after each addition. Add the crumbled mincemeat, stir well.
Spoon into 2 greased and floured 9" round cake pans. Bake 300 for 45-50 minutes. Cool for 10 minutes in pan. Remove and cool completely.
Spread Caramel Cream Frosting between and top and sides of cake.
place 2 Tbls sugar in heavy pan, cook until dissolved and golden brown. set aside.
Combine the 1 cup sugar, butter and cream in a saucepan, cook over medium heat, stirring constantly until it comes to a boil. Stir in the browned sugar. Return to a boil and cook for 2 minutes, stirring constantly. Remove from the heat and beat until a spreading consistency.
