Crumble ground beef into large skillet. Brown. Drain of excess fat. Stir in 2 packets of enchilada or taco seasoning mix and water. Bring to a boil and lower temperature and let simmer with cover on top for 5 minutes. Stir occassionally. Put a corn tortilla in skillet covered with some of the meat mixture and let cook on low for 3 minutes. Then place the tortilla with the meat mixture on top and on the bottom of it on a plate. Liquid from the meat mixture needs to be on the bottom and top of the tortilla. Top the tortilla with shredded cheese, lettuce and tomato. Eat and enjoy. Sure to be delicious. Makes 6 servings.
