Bacon Biscuit

This is a quick meal in one, from my Granny's old handwritten cookbook. Butter if desired, or split and add a slice of cheese. Delicious!


•2 c. self-rising flour
•2 T. butter
•pinch of sugar, pinch of salt
•pinch of soda
•1/2 c. buttermilk, beaten with 1 egg
•8 slices bacon, cooked, drained, crumbled


Preheat oven to 400 degrees F. Mash flour and butter together until blended well. Stir in remaining ingredients, tossing lightly to blend. You may not need all the buttermilk, depending on how dry your flour is, or you may need a bit more. Pat dough out onto lightly floured board, and cut into 4 to 6 large biscuits. Place on greased baking sheet, spacing an inch apart. Bake 10-12 minutes, until risen and golden brown.
