Broccoli Chicken Casserole

All ages will go for this comforting meal in one. Take just a handful of ingredients and minutes to put togther. This recipe calls for boxed stuffing. I have found that making my own stuffing and using it, is so much easier then using the boxed version. The box versions contain so much sodium. If using your own recipe for stuffing you don't need the 1-1/2 cups chicken broth. Go to the step of the chicken next. Serves 6.


1-1/2 cup reduiced sodium chicken broth
1 package (6 ounces) chicken stuffing mix OR your homemade recipe to equal the boxed stuffing
2 cups cubed cooked chicken
1 cup frozen broccoli florets, thawed
1 can (10-3/4 ounces) lower fat broccoli cheese soup, undiluted
1 cup 2% shredded cheddar cheese


In a small saucepan, bring broth to a boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 minutes. Meanwhile, layer chicken and broccoli in a greased 11x7 baking dish. Top with soup. Fluff stuffing with a fork; spoon over soup. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through.
