Ingredients
2-1/4 c. flour
1/2 Tbsp. baking powder
1/2 tsp. salt
2 eggs, whipped until frothy
1/3 c. granulated sugar
1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1-1/2 Tbsp. melted butter, cooled
1/3 c. milk
Directions
Blend flour, baking powder, salt, and spices.
After beating eggs, add sugar and vanilla, and beat until combined. Add melted butter, beat again until combined. Add milk to egg mixture, beat again. Pour liquid ingredients into dry, and stir until combined. Knead a minute until no longer sticky (may add another dusting of flour if absolutely necessary). Pat out on lightly-floured surface, less than 1/2" thick.
Cut into shapes as desired. Preheat oil to medium in a deep skillet or kettle. Test temperature with a small piece of dough, which should sizzle immediately when placed in pan, but not burn. It takes about a minute for "holes" and a minute per side for full-sized doughnuts. Makes a generous dozen.
Glaze with 2 c. powdered sugar, blended with a few drops of milk, or dust with plain powdered sugar, or toss in a paper sack with a cup of granulated sugar mixed with a teaspoon of cinnamon.
