Lime Pie Squares

Cool and refreshing summer dessert. Takes a little bit of time (has several steps) but it is well worth it.


1 can (12 oz) Carnation Evaporated Milk (I usually put in refrigerator night before)
1 pkg (4-serving size)Lime gelatin (any brand)
1 3/4 cup Boiling Water
2 cups Crushed Choc.Sandwich Cookies (I use Oreos, do NOT use double stuffed) about 20 cookies.
1/3 cup Butter-melted
1 cup Sugar
1/4 cup Lime juice
2 tsp. Lemon juice
Shaved chocolate (optional)


Pour evaporated milk into medium size mixing bowl,chill in freezer until very cold,but not frozen. In large mixing bowl dissolve gelatin in the boiling water. Chill in the refrigerator until partially set(consistency of unbeaten egg whites). Meanwhile,in medium bowl stir together crushed cookies and butter. Press crumb mixture into the bottom of a 13 x 9 baking pan, set aside. Beat gelatin with electric mixer on medium speed until fluffy. Gently stir in sugar, lime juice,and lemon juice, set aside. Rinse beaters and then beat chilled evaporated milk on medium speed until very foamy. Fold whipped milk into gelatin mixture. Spoon mixture into prepared pan. Chill in refrigerator until set. To serve, cut into squares. Garnish with shaved chocolate if desired. Enjoy! Serves: 15.
