Asian-style veggies and coconut rice

this is the perfect meal for a light, but satisfying meal.

Ingredients

-extra virgin olive oil - 1 tbs sesame oil- garlic - red onion - carrots - brocolli - bell peppers - jalepeno - sugar snap peas - celery - bok choy - cabbage - low sodium chicken broth( just enough to make a sauce) - soy sauce - 1 to 2 tbs light coconut milk - hot asian chile sauce(or red pepper flake) - amy favorite veggies you like. jasmine rice and coconut milk and pepper.

Directions

heat oil in wok add garlic & onion - saute. add all ingredients but jasmine rice and some coconut milk. let simmer and prepare rice with 1/2 water & 1/2 coconut milk. serve together. chicken or any meat or seafood you can add if you like.
