Chicken Salsa Verde

I tried this recipe and it was such a hit with my family, I thought others might enjoy it too.


1 pkg. hash brown potatoes ( from the dairy case);1 8oz. carton sour cream; 1 1/4 # boneless and skinless chicken thighs; 2 tsp. mesquite seasoning; 2/3 c. green salsa; 1 c. shredded Montery Jack cheese; Chopped avocado and sliced green onion for topping.


Heat oven 400; grease 9x13 casserole. Place potatoes mixed with sour cream evenly in dish. Rub chicken with seasoning and arrange on top of potatoes. Cover with foil and bake 40 minutes. Spoon green salsa over all and sprinkle with cheese. Return to oven until cheese melts. Serve with avocado and green onion sprinkled on top.
