We love carrot cake and I found this easy recipe to make it. This is especially appreciated at birthdays at our house, so that means at least once a month.
I never tire of making it because it is so good.
Coimbine cake mix, salad dressing, eggs, water, cinammon and 1 teaspoon vanilla in large mixer bowl. Beat at medium speed until smooth. Stir in carrots and walnuts. Pour into greased 9 x 13 inch cake pan.
Bake at 350 degrees for 35 minutes or until cake tests done with toothpick. Cool in pan on rack.
Beat cream cheese, milk and remaining 1/2 teaspoon vanilla in mixer bowl till smooth. Add confectioners' sugar gradually, beating until light and fluffy. Spread frosting on cake. Serve
