Easy Carrot Cake Serves 12

We love carrot cake and I found this easy recipe to make it. This is especially appreciated at birthdays at our house, so that means at least once a month. I never tire of making it because it is so good.


1 2 layer yellow cake mix
1 1/4 cups mayonnaise type salad dressing
4 large eggs
1/4 cup cold water
2 teaspoons cinammon
1 teaspoon vanilla extract
2 cups finely shredded carrots
1/2 cup chopped walnuts (optional)

3 ounces cream cheese, softened to room temperature
1 Tablespoon Carnation Condensed milk
1/2 teaspoon vanilla extract
3 cups sifted confectioners' sugar


Coimbine cake mix, salad dressing, eggs, water, cinammon and 1 teaspoon vanilla in large mixer bowl. Beat at medium speed until smooth. Stir in carrots and walnuts. Pour into greased 9 x 13 inch cake pan.
Bake at 350 degrees for 35 minutes or until cake tests done with toothpick. Cool in pan on rack.
Beat cream cheese, milk and remaining 1/2 teaspoon vanilla in mixer bowl till smooth. Add confectioners' sugar gradually, beating until light and fluffy. Spread frosting on cake. Serve
