No Bake Cookie (Almond Bark Cookie)

I just tried this cookie a couple days ago. I liked it so much I had to ask for the recipe. I will be making a batch this weekend. These are great for the summer with them being a no bake cookie. Something a bit different and even the kids can help make! Depending on the size, one batch can make a few dozen cookies. Great to take somewhere or just pop in the freezer for a quick snack another time.

Ingredients

1 pound almond bark
1 cup peanut butter, smooth or chunky
1 1/2 cups crisp rice cereal
1 1/2 cups miniature marshmallows
1 1/2 cups peanuts*

Directions

In a microwave safe dish, melt almond bark, stirring every minute. Do not over heat. When melted, stir in peanut butter. Once incorporated, stir in the cereal, marshmallows and peanuts. Drop by spoonfuls onto waxed paper until cooled. Store in refrigerator. May be frozen. *If using less peanuts, increase amount of rice cereal by that amount.
